Effervescent and fragrant with citrus notes, the Pomegranate Champagne Blaze is the perfect drink to ring in the New Year. With its blend of pomegranate sweetness and tartness, this cocktail offers a sensory experience that will elevate your celebration as the clock strikes midnight.

To make the Pomegranate Champagne Cocktail, you will need:
– 4 oz of Champagne or prosecco
– 2 oz of pomegranate juice (freshly squeezed or store-bought)
– 2 oz of Cointreau
– 2 sprigs of mint leaves
– 2 tbsp of pomegranate arils
– 2 orange peel discs (approximately 1 inch in diameter)

Here’s how to prepare it:
1. Begin by chilling two coupe glasses in the freezer for about 20 minutes.
2. If using freshly-muddled pomegranate juice, mash the arils or blend them and strain the juice.
3. Divide the pomegranate juice and Cointreau evenly between the chilled coupe glasses.
4. Slowly pour 2 ounces of Champagne into each glass using a mixing spoon to control the bubbles, then gently stir.
5. Sprinkle a tablespoon of pomegranate arils into each cocktail.
6. Release the aroma of mint leaves by smacking them around each glass and use a sprig to garnish each drink.
7. Create two orange peel discs by slicing along the skin of an orange.
8. Light a wooden match about 3 inches above each cocktail, then pinch the orange peel to express the oils over the flame, infusing the drink with a smoky citrus essence.
