“Crispy Chicken & Veggie Sheet-Pan Meal with Fluffy Couscous”

A vibrant and aromatic sheet-pan dinner is effortlessly prepared. Chicken thighs seasoned with spices are roasted to crispy perfection, while peppers and onions absorb the flavorful drippings. These veggies are then added to fluffy couscous along with olives, raisins, almonds, and parsley, creating a delectable side dish. This flavorful and convenient meal is ideal for weeknights or entertaining.

**Ingredients:**
– 8 bone-in, skin-on chicken thighs
– 2 tbsp extra-virgin olive oil, divided
– 1½ tsp salt, plus more to taste
– 2 tsp paprika
– 1½ tsp ground cumin
– ½ tsp ground cinnamon
– ½ tsp ground ginger
– ½ tsp ground cloves
– ½ tsp black pepper
– ¼ tsp cayenne, or more to taste
– ½ red onion, finely diced
– 1 red bell pepper, finely diced
– ½ yellow bell pepper, finely diced
– 1¼ cups chicken broth
– 1¼ cups couscous
– ¼ tsp ground turmeric
– ½ cup chopped pitted green olives
– ½ cup raisins or chopped dried prunes
– ¼ cup finely chopped parsley
– ¼ cup roughly chopped almonds, plus more for garnish

**Preparation:**
1. Preheat oven to 400°F with a rack in the middle and line a sheet pan with parchment paper.
2. In a large bowl, mix chicken with 1 tbsp olive oil, salt, paprika, cumin, cinnamon, ginger, cloves, black pepper, and cayenne. Refrigerate for up to 4 hours or proceed immediately.
3. Place chicken thighs on the sheet pan, skin side up, and add onions and bell peppers to the other side. Roast until vegetables are tender, about 30 minutes.
4. Boil chicken broth in a saucepan, remove from heat, and pour over couscous in a bowl. Add turmeric and remaining olive oil, stir, cover, and let stand for 10 minutes.
5. Combine roasted vegetables and chicken drippings with the couscous mixture.
6. Return chicken to the pan, baste with drippings, and roast for an additional 15 minutes. Broil until skin is crispy, about 5 minutes.
7. Add olives, raisins, parsley, and almonds to the couscous, mix well, and season with salt.
8. Serve couscous on a platter topped with crispy chicken thighs.
